UCF Heads Into Another Ranked Test With Its Biggest Weakness Exposed

As the UCF Knights prepare to face Oklahoma State's potent offense led by star quarterback Drew Mestemaker, they must overcome recent defensive struggles and road woes to secure a crucial Big 12 victory.

UCF’s defense is staring down another major test, and this one comes with a quarterback many evaluators already have circled for the NFL Draft.

The Knights are back on the road Saturday, heading to Stillwater to face No. 18 Oklahoma State at noon on ESPN2.

It’s the second straight week UCF will line up against a ranked opponent, following last week’s 27-17 loss to No. 20 Houston.

After this stretch, the Knights get a bye before hosting No. 8 BYU on Oct.

At the center of this matchup is Oklahoma State quarterback Drew Mestemaker, a sophomore from Austin, Texas, who has quickly become one of the most dangerous passers UCF has seen this season. He’s completed 67% of his throws for 1,271 yards, 11 touchdowns and five interceptions, while also adding 106 rushing yards and a score. He’s been projected as a possible late first- or early second-round pick in next year’s NFL Draft.

“This guy is a good player,” said coach Scott Frost. “Just about everybody in the country would have taken him in the portal when he left, but he followed his coach.

Drew’s a special guy. He’s going to be a draft pick.

When you’re playing a guy like that, you really got to be on your game.”

Defensive coordinator Alex Grinch echoed that sentiment.

“It’s another quarterback of quality,” added defensive coordinator Alex Grinch. “He doesn’t get rattled, he doesn’t get sacked and he’s got an arm that probably rivals anybody.”

Mestemaker’s production has been relentless. He has thrown for at least 200 yards in 19 straight games and has cleared 300 in each of the past three.

His play has driven Oklahoma State’s turnaround after a rough 1-11 season in 2025. The Cowboys brought in former North Texas coach Eric Morris after he guided the Mean Green to an 11-2 finish, and he brought his fast-paced Air Raid background with him.

That offensive identity has taken hold in Stillwater. Oklahoma State ranks second nationally in total offense and seventh in passing offense, and the Cowboys have been rolling since a 24-10 loss at Tulsa on Sept.

“There’s not a problem they don’t create (with their offense),” said Grinch. “Their ability to run the football creates a lot of stuff in the passing game and you’ve got a quarterback that can direct it all.

“It’s another week for us facing a top 10 offense that we’ve got to defend. It’s what we signed up for.”

UCF’s own defense comes into the game banged up and coming off a difficult finish against Houston. The Knights gave up 27 points in the final 21 minutes last week, after allowing only 15 second-half points before that game.

“Their defense has been playing at a really high level,” Morris said of UCF’s defense. “Not many people have been able to establish the line of scrimmage with that defensive line. It’s a big challenge in front of us.”

Injuries have added another layer of stress. Starting linebacker Lewis Carter is expected to miss his third straight game because of a lower-body injury, and linebacker Jayden Jennings could be a game-time decision after injuring his shoulder in the loss at Houston.

Saturday also gives UCF another shot at snapping its 11-game road losing streak, the third-longest in the country.

For Frost, the fix is less about attitude and more about finishing the job.

“I don’t think it’s anything about the mentality of the team,” said Frost. “They showed up and played hard against Pitt on a tough day.

We played really well for a long time against Houston. We just didn’t finish those games; we had a chance and didn’t.”

“We’ve been up for all the challenges and we’ve won a couple and we’ve lost a couple. We’ve got to find a way to win some more.”
