The New York Islanders’ new menu at UBS Arena has a headliner that sounds like it was dreamed up in a fever dream and perfected in a test kitchen: the Nerds Gummy Cluster Brie Grilled Cheese.
It’s the creation of Executive Chef Ted Donnelly, who has run food operations for Delaware North at UBS Arena since the building opened in 2021. He’s been behind the menu across clubs, suites, catering and concessions, and this latest item is already getting attention for all the right reasons. The sandwich pairs creamy brie with Nerds Gummy Clusters on toasted sourdough, and fans can find it at the Section 220 Market.
The build is exact for a reason. Each sandwich uses six to seven gummy clusters and three ounces of brie, a balance Donnelly and his team settled on to keep the flavor from drifting too far into sweet or sour territory. The clusters melt down into what he described as a kind of warm jam, giving the sandwich its sweet-and-savory punch.
The idea came to him while scrolling through Instagram Reels and Tik Tok, where he saw a cheesemonger pairing brie with Nerds Clusters. He liked the combination enough to put his own spin on it.
"I just thought to myself, we can make a grilled cheese out of that," Donnelly said. "Within two days later, I got some sliced brioche bread from the store, and some Nerds Clusters; we had some brie already. I had my Concession Chef cook a few up with varying levels of brie and clusters, and here we are."
Donnelly has been with Delaware North for a while. Before UBS Arena, he spent four years at MetLife Stadium, where he handled culinary operations for Super Bowl XLVIII and also worked an NHL All-Star Weekend. His background includes culinary arts and systems at Pennsylvania College of Technology, time at Penn State University, certification as an American Culinary Federation Certified Sous Chef and a previous stop as Executive Sous Chef at Plainfield Country Club in New Jersey, where he helped lead food service during the 2011 Barclays PGA tournament.
For Donnelly, the sandwich is also a reflection of the energy around the Islanders right now and the people working beside him.
"I think with a fresher and younger Islanders team, I think that's the general push with the Islanders - focus on having fun. They're winning.
They're having fun," he said. "We want to tap into that and build on the excitement ...
It's a lot of fun. What I get to do, I have a great team under me that has mostly been there with me since we first opened the arena."
He said his approach is simple: don’t dismiss it before trying it, and he wants as many people as possible to give it a shot.
The grilled cheese isn’t the only eye-catching addition coming to UBS Arena in 2026-27. Other new items include an Uncrustable Pulled Pork Tostada and a Burrata Boat.
The tostada is a fried peanut butter and jelly sandwich topped with pulled pork, chopped peanuts, grape jelly barbecue sauce and scallions. The Burrata Boat features golden tater tots topped with cherry tomatoes, creamy burrata, balsamic glaze and fresh basil.
UBS Arena General Manager Michael Sciortino said the goal is to keep the building and the franchise feeling distinctive.
"I think it's very important for us to be fresh and different, and make sure that people are thinking about us and talking about us," Sciortino also said in an exclusive. "We want to make sure we're still best in class in really everything we do.
So, if we can offer some interesting food items and cool new drinks that get people excited, then we get them in the building, and then they're in and thinking about us. It's obviously a win ...
I knew people were going to like it."
Donnelly said his focus remains on the people coming through the doors, making sure the food matches the atmosphere they’re trying to create.
For him, Sciortino and the rest of the staff, the new menu feels like another step in pushing the arena experience forward. And if the early reaction is any indication, the Nerds Gummy Cluster Brie Grilled Cheese may be the item that gets the most buzz.
